Chicken Foil Meal

    1 pound skinless, boneless chicken breast meat - cubed

    2 onions, diced

    1 (8 ounce) package sliced fresh mushrooms

    1 yellow bell pepper, seeded and sliced into strips

    1 red bell pepper, seeded and sliced into st 4 cloves garlic, sliced

    4 small potatoes, cubed

    1/4 cup olive oil

    1 lemon, juiced


    In a large foil pan combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well. Cover aluminum pan with aluminum foil and press to seal

    Cook in the pre heated Campfire Oven chicken is opaque and the potatoes are tender, around 40 minutes.

Campfire Oven Pizza



1 premade pizza dough

1 can (8 oz) pizza sauce

½ cup sliced pepperoni

1 cup shredded mozzarella cheese

1 tablespoon grated Parmesan cheese

    1.  Heat Campfire Oven to 250-300°F. Sprinkle cornmeal on surface that you will roll out the dough. Unroll dough. Starting at center, press dough into 12-inch square, forming 1/2-inch rim.

    2.   Spread pizza sauce over crust to within 1/2 inch of edges. Top with pepperoni and mozzarella cheese. Sprinkle with Parmesan cheese.

    3.  Bake pizza 14 to 18 minutes, thin crust 8 to 12 minutes, or until crust is golden brown. Rotating pizza halfway through cooking time.  

Cut into 4 servings.
